Although it’s now in the 80s here, there are parts of the country where it’s still cold enough to use the oven for dinner. Have you ever prepared a meal and wished you’d had some bread to go with it? Here is a spur-of-the-minute recipe, using ingredients you’re never without.
Recipe of the Week: Mayonnaise Muffins
1 c. self-rising flour
1/2 c. milk
2 tbs. mayo
1 tbs. sugar
Mix together and put in muffin pan using cooking spray or cupcake papers. Bake at 400 for 15-20 minutes. Whalah!
Now, you can tell this recipe doesn’t make many muffins. So, if you have more than three people in your family, you’ll want to double the recipe. Also, you might want to add some of your favorite grated cheese to the mixture or a dash of garlic powder. This basic recipe allows for creative additions.
Thought of the Week: When I was in school, we were taught that the seasons changed on the 21st of March, June, September, and December. However, for the past couple decades, the seasons have been announced as the vernal equinox, summer solstice, autumnal equinox, and winter solstice with dissimilar dates. Who decides this stuff? It must drive the calendar people crazy.
