Dinner Salad Supreme

There is a salad that totally satisfies Danny. We’ll have it as the entree with some garlic bread and fruit salad. All salads are fun and tasty – just by adding different and more ingredients you can surprise yourself and your family with something healthy and delicious.

Recipe of the Week: Dinner Salad Supreme

hearts of Romaine lettuce, torn or sliced
baby spinach
celery, diced
green onions, diced
avocado, peeled and diced
carrot, shredded
dried cranberries
shredded parmesan/romano/asaigo cheeses
hard-boiled egg, diced
ham or Canadian bacon, diced
croutons of choice, crushed/crumbled (optional)
tomato, diced (optional)

Directions:
1. Rinse vegetables and toss together in large bowl or make separate salads in large soup bowls. Add diced egg and ham, dried cranberries and shredded cheese. Add favorite dressing.
2. Serve with fresh sourdough garlic bread: Slice bread to desired thickness, spread with butter, sprinkle with Mrs. Dash’s Garlic and Herb seasonings, and top with grated parmesan cheese. Broil until golden brown, remove immediately.


Thought of the Week: We started a road trip early on Tuesday, heading to Burlington, KY, where Danny’s nephew is getting married tomorrow. We did not take our time getting out of Texas or going through Arkansas or Tennessee, but noted the vast difference in trees lining the interstates, as well as the cooler temperatures once we left Texas. We’ve been in  Louisville visiting with my relatives since Wednesday afternoon; we made good time. It’s been six years since our last road trip and we’re having a great time!
