Zesty Chocolate Cannoli

Man, are you and your guests going to like this healthy dessert! It’s low in carbs, sugar, and sodium, plus it has protein and fiber. However, just because these treats  are “lite” does not mean you should make a meal out of them…

Recipe of the Week: Zesty Chocolate Cannoli Dessert

1 container (16 oz.) fat-free ricotta cheese
1/2 c. powdered sugar
1 tbs. freshly grated orange zest
2 tsp. freshly grated lemon zest
1 tsp. freshly grated lime zest
1/2 tsp. vanilla extract
3 c. dark chocolate chips, divided
12 small or 6 large cannoli shells

Directions:
1. In a medium bowl, combine the ricotta, sugar, zests, and vanilla. With an electric mixer, whip until light and fluffy.
2. Gently fold in all but 1/2 c. chocolate chips.
3. Spoon filling into cannoli shells. Melt the remaining chocolate chips and drizzle over each shell before serving.

Thought of the Week: For two years, I have been trying to get Dad to buy some golf clubs that would better accommodate his arthritic shoulders. It’s amazing that the ball goes as far as it does with his restricted swing. Lately, his nine-hole golf game has stabilized at 49, which he hates, but it’s still better than my score. However, on Wednesday, I happened to beat him by two strokes. Though he was very happy for me, he finally agreed that maybe it was time to check out some new clubs. 🙂 With Dad, there’s only so much competition he can handle; he doesn’t even give his great-grandchildren a break playing checkers…We will be going to the new Golfsmith in San Antonio on Monday.
