Okay, it’s hot! While we have remained in the 90’s here, Idaho has been at 106. Elsewhere corn and soybean crops are being destroyed by lack of rain and the heat. Everyone with air-conditioning is staying inside, while their yards get parched. Water reserves are being depleted, etc., etc., etc. Although this icy dessert won’t fix the problems mother nature has caused, it will definitely cool you down.
Recipe of the Week: Orange/Pineapple/Banana Freeze
6 oz. can frozen orange juice
1 c. hot water
2 tbs. lemon juice
15 oz can crushed pineapple in natural juice
4 bananas, sliced
sprigs of mint
1. In large bowl, empty frozen juice and add hot water to melt. Stir.
2. Add all other ingredients, stirring a little to mix. Pour into a freezer-safe serving dish, cover, and freeze for 8 hours or overnight.
3. Before serving, let it thaw for an hour until slushy.
4. Spoon into dessert bowls and serve with a sprig of mint. Cover and refreeze any leftovers.
Thought of the Week: Wednesday, in an effort to thoroughly wallop me at golf, Dad brought two new hybrid woods, specially designed for his limited range of motion. Although they did not improve his score, he liked them because he was no longer dubbing or topping the ball. Yesterday, to further his efforts for staying ahead of me, he had a cataract removed – only because the surgeon assured him the recovery time would be brief. Aside from a downpour or snow, very little stops or postpones our weekly competition. He’s really, really lucky I don’t have the time or inclination to practice between our outings. 🙂
