Tex-Mex Eggplant

Ready to try something a little different? Well, there’s certainly more than one way to cook this vegetable.

Recipe of the Week: Eggplant Mexicana

1 med. eggplant, peeled & cubed (1 lb.’s worth)
2 c. chopped fresh tomatoes
1/4 c. chopped onion
1 tsp. minced garlic
1/2 tsp. chili powder
1/4 tsp. pepper
2 tbs. snipped parsley (or cilantro)

Directions:  In large nonstick skillet, combine all but the parsley/cilantro. Simmer, covered, for 15-20 minutes or until eggplant is tender, stirring a couple of times. Sprinkle with parsley/cilantro before serving.

Option: If you aren’t watching your salt intake, you can substitute canned Mexican diced tomatoes with chilis and substitute ground cumin for chili powder – or not, if you like it really spicy.

Thought of the Week: Appearance – Every single day of every single week of every month, we are assaulted via the internet, magazines, and television with apparent perfection of appearance – ideal hair, face, body, fashion, etc., etc., etc. – until I’m ready to gag…The hairstyle of Olympic gold medalist Gabby Douglas has bothered some stupid people. Geez! A sixteen-year-old American girl has won GOLD, for heaven’s sake! What the heck did her hair have to do with that? And yesterday, there was this article, bullied-14-year-old-girl , about a girl who had reconstructive surgery on her ears, nose, and chin because of bullying. The surgeon performed $40K of work for free because of her “deformities.” How dare he say that! Gawkiness is part of adolescence; very few children do not go through that stage. A cleft palate is a deformity…Unfortunately, until society becomes blind to appearance, these prejudicial issues will continue. And, bullies don’t slither far from their tree roots.

(Remember this “Twilight Zone” episode?)

    Love eggplant! And those people who dissed Gabby Douglas on her hair need to look at themselves first and check out their level of ‘shallowness’ An amazing athlete!
