Apple Broccoli Salad

As the hot summer rages on, using the stove really turns me off. The A/C is getting enough of a workout without my lowering the temperature further just to cook. This simple salad will tickle your taste buds, as a lunch by itself or with something off the barbeque.

Recipe of the Week: Apple Broccoli Salad

2 large McIntosh or 3 Gala apples, unpeeled and diced
3 c. fresh broccoli, cut up
1/4 c. sugared pecans, snapped in half (or chopped walnuts)
1 tbs. chopped red onion
1/3 c. dried cranberries or raisins
1/2 c. fat-free vanilla yogurt
Romaine lettuce leaves (optional)

Directions: Mix all ingredients together, except lettuce, in large bowl. Then serve on bed of lettuce, either individual plates or one large plate. Or serve in dessert bowls with a meal.
