As soon as I saw this recipe, I had to try it. Never occurred to me before to put these two foods that I really like together. As usual, I altered a couple ingredients.
Recipe of the Week: O’Brien Style Smoked Salmon
3 c. frozen O’Brien Style hash browns
2 pouches (3 oz. each) smoked Pacific salmon (do not substitute lox or fresh fish)
1/4 tsp. black pepper
1/4 tsp. sea salt
2 tbs. olive oil
1. Thaw potatoes in microwave, then combine with salmon, pepper, and salt in bowl and toss gently to mix well.
2. Heat oil in large nonstick skillet, over med. high heat. Add potato mixture; spread to cover surface of skillet and carefully pat down to avoid oil spatter.
3. Cook 5 minutes or until crisp and browned. Turn over in large sections and cook an additional 3 to 5 minutes until brown.
4. Serve with a crispy green salad and chunks of tomatoes. Serves 4.
Thought of the Week: After watching both RNC and DNC conventions, the differences are very clear. The Republicans are about division, exclusion, superiority, working for themselves, and helping no one; while the Democrats are about diversity, inclusion, equality, working together, and helping others. The Republicans advocate sink-or-swim self-reliance; the Democrats avocate community lifeboats.
The Republicans’ budget will bankrupt Medicare by 2016, but their voucher system won’t kick in until 2023. The Democrats’ plan will keep Medicare healthy until 2024, which hopefully will give Congress enough time to keep the system going long into the future. Since my Medicare starts this month and my parents rely on Medicare, the Republican plan seems pretty stupid and dangerous. Also, by dismantling the current healthcare, The Republicans would keep very ill children from receiving the necessary operations and treatments to keep them alive – how is that better for this country? They also want to decrease educational funding. Well, if their fancy degrees haven’t taught them that America depends on education to produce more engineers, scientists, technologists, research/development, and innovations in order to remain the best country in the world, then maybe they need to go back to school!
Thanks to President Obama: 1)Women have the right to equal pay for equal work; 2)The auto industry is thriving; 3)American oil and natural gas production is up, so we’re less dependent on foreign oil; 4)Children to age 26 have health care; 5)Jobs are increasing, unemployment is decreasing, and the stock market is thriving; 6)Pell Grants have been expanded and students can pay back their loans based on their income; and 7)We’re out of Iraq, Bin Laden is dead, and our soldiers and their families, who have sacrificed so much, are receiving the help and repect they deserve.
